wedding!

i’ve been looking forward to this post for a loooong time. if you like weddings, then you are going to love this :)

my dear friend amanda doesn’t like cake. and let me just say that this is more common than you think. i often stumble upon people making requests for pies, cookies, brownies or cheesecake. but not cake. strange, isn’t it?

i was not only honored but stoked when amanda asked me to bake for her wedding! she is so much fun and super laid back. love her.

she wanted mini cheesecakes {only} at first but changed her mind and asked me to bake additional chocolate peanut butter cupcakes & lemon cream cheese cupcakes. she has great taste because i looove the flavors and sweets she picked out. don’t you agree?

we had several meetings {more like dinner parties} and talked about color scheme, frosting shapes, flavors and all things wedding.

throughout the process amanda was super easy going and amazing to work with! ty. her now husband. was sooo nice also. oh, and he eats and loves cake.

what an awesome bride & groom. they are beautiful inside out! so happy to call them my friends ;)

the wedding was amazing filled with pretty details. it was held in lake country minnesota where pretty scenery is always present. add that to a beautiful couple and you get awesomeness!  i wish ty and amanda all the love in the world for their marriage.

mini{ature} food

i don’t know what it is. but. every time i see miniature food. i cannot resist aaaand just want to eat it. all.

mini sliders, mini meatballs, cupcakes, cake pops, mini key lime pies, mini apple pies. you get the idea.

maybe because miniature food is so cute it’s that i want to eat it even more than normal size food? do you find the size of your food appetizing or is it just me?

i think mini edible things are perfect: bite size, mess free, less calorie intake, compact flavor one bite at a time, and the list goes on.

as you know, i make sweets of every kind. so when i got this custom request of mini cheesecakes i was stoked.

sunshine

it’s been pretty sunny for the past week or so in the fargo-moorhead area. and. i’m. truly. enjoying it !

since it’s still summer, i want to introduce you to mr. {cute} sunshine.

but before i proceed, i’ll give you some background first.

this little boy wanted some cool cupcakes to bring to his daycare. why? so he could be the popular kid of the entire class.

well, it was more like he just wanted to share the little cakes with his little friends and eat them after nap time.

but, i like my version better ;)

not unusual, but a really specific request:

nothing chocolate
light frosting
something on top of frosting

see? specific.

hmm, what do kids like? i know they love bright colors and fun shapes. right?

so i thought and thought about what to make. and voila. i had my aha moment.

confetti cake with a cute sun on top and sanding sugar. boom!

by the way, the boy was the most popular kid at the daycare that day. his mom told me his classmates kept telling him “thanks for bringing the cupcakes – we loved them” over and over again.

my version wasn’t that far from reality ;)

love post

recently celebrated 5 years of being together with the boyfriend. it was on a saturday, so we had the whole day {insert weekend here} to ourselves.

confession: didn’t bake anything for the big 5. it’s okay. i’m saving it for his birthday !

there was a bike ride, picnic with a blanket where we had delicious handmade bread with wild blueberry jam, more bike riding, fancy dinner and out & about with friends.

did i mention everything was planned by my other half?!? i had no idea what we were going to do because he kept telling me we were just going to “hang out.”

i love him. with. capital. l. {i don’t use caps but who cares??!? LOVE YOU bf, love you !}
